I like them all, especially in the manga where they're all fleshed out well. Both Demyx and Luxord are hilarious and fun and interact well with everyone. Luxord is like an eccentric bachelor uncle and Demyx is Saix's punching bag, as well as a constant well of comic relief and empathy. Voted for Demyx because his death in the Manga was both funny and very, very tragic - managing to survive all the way to the end, keeping us laughing, only to fade away crying, asking Roxas why... But really love all of them. Luxord is wonderful in Wonderland, constantly changing size and being frustrated, and receiving the love-crush of the Queen of Hearts. Too much fun. Axel, Xion, and Roxas of course are heart-wrenching. Saix is hardcore taskmaster constantly at odds with the lazy Demyx, Xigbar has real presence and is always enjoyably sinister, and Xaldin eats mushrooms that make him laugh for days. Xemnas is probably the only one who bores me.
