Assuming the BBCode thing isn't lying to me, you put [ s] before the message and [ /s] at the end, just without the spaces in the brackets. I don't know if this shows on iPad, but on my computer, there's a couple bars above the text box showing different symbols and letters. The one that looks like S also activates crossed out text.
