Ultima is the ultima weapon you get after you synthesis it at the moogle shop, and for sephorath i would have my magic upgraded all the way use the aeroga have lots of potions and elixers. and if ya dont have the ultima weapon be around level 80 and up hope this helps

I usually jump towards him and he will swipe his sword. A good combo will be open, just don't continue to attack or he will counter.

is this in KH or KH2, if u told me KH2 then I would tell you how to beat him but if its KH then I dont know soory
