Personally, I'd like to see a scene or two that makes Riku and Mickey meeting actually relevant to the plot instead of just sort of randomly appearing

Considering most of the "cutscenes" (No, not the CG clips) in days were unvoiced and in-engine, they would probably have to make a ton of new scenes to make something even remotely coherent, both in visual consistency and plot.

 

It'd be pretty hilarious if they didn't though.

They could; only because they are remaking the game in hd video. I don't see them making completely new scenes but maybe old gameplay as new scenes because it's better off doing it that way for video remake. If it was a complete game remake and not just video then I would totally think that they shouldn't do it.

I think they will be adding new cutscenes. Let alone with just the cutscenes alone doesn't quite show Day 358. Some scenes in the game aren't cutscene but interactive conversations with characters. So I do expect to see new once since it's gonna be 2-3 hours
