If battle themes count, Rage Unleashed. There's so much depth to that song.

If it's only, y'know ACTUAL character themes, I'd say Ventus' theme, followed by Sora's.

Well Vanitas has a cool one, I also like Riku's. Mysterious Figure's for sure. That's all of the Kingdom Hearts Character themes that I could think of that I especially liked. But now that I think about it, Roxas' isn't bad either.
