Because it does everything wrong with a story telling. It starts of fine and decently, characters have a history of their own and there's a tiny worldbuilding. But as the series goes on, it just went to ridiculous stages to make the world whackier in a bad way. Every time the Fairy Tail gang defeated a group of enemy, a new group of enemy suddenly appears who are just suddenly stronger than the previous ones and the gang needs to get stronger and rinse and repeat.

This wouldn't be an issue if it wasn't for the "stakes" the story set up but never delivers on. The last fight in the series is literally against an enemy who has no weakness but suddenly lost thanks to power of friendship. Erza has the biggest plot armor in the series. Literally loses all her senses. She can't feel anything, can't see, can't touch, can't smell, can't hear but somehow she still won and you know what the reason was? This is the line straight from the series, "Because she's Erza" and that's it. She won because of that reason and nothing more.

Now this is an issue that One Piece has also but Mashima abused the firetruck out of it to the point it ruined every single stake in the series. And that is to set up a death and never go through with it. The Fairy Tail master had like 6 deaths throughout the series that never went though and survived every single one of those. And this is with just one character, plenty of others have had the same problem. This ruins any and all tension the story sets up because at that point the reader/watcher knows that he's never going through with any of it.
