Heat as in my stove heat. Like if it’s not hot enough and I’m doing a steak, you try to get that golden crust almost on the surface. And once you get that color, it’s overdone on the inside! So if you’re like me and you enjoy medium rare, you gotta get it real hot before putting it down and then within a minute your surface should be perfect, then you flip. And the inside is still nice n pink
