There was really no time in between Sora leaving Yen Sid's tower and appearing in the next world. Meaning there was no time in available to show off how exactly he was able to learn keyblade transformations before he started using them. Because He left the tower, changed clothes, and from that moment on in the gameplay, you are able to use hero's origin. Which is made canon that Sora has, on account of Sora not using the Kingdom Key in that scene in San Fransokyo lolTo be fair, I guess When SDG crouch down in front of Yen Sid's desk, I guess Yen Sid could just be like "OH ALSO-" But that just feels so shitty loljust because it doesn't actually show them walking off.
