I saw this video that explained why Kairi wasn't disappointing and his main point is that

Sora says that his journey started when he lost Kairi, so Nomura could have written it so that now her journey could start now that she's lost him

KH2 Sora is his strongest and then he loses so much of it in KHDDD

Then in KH3 he's like Hey fudge it let's do anything

Well he could have still lost his powers and all that. Just not be playable
